Here is the list of useful Ketcher hot keys:

When simple selection mode is active you can enter in-place editing by clicking on atom. This mode supports direct input of atom label and charge, for example: N-, C2+, Na.
When you double click on atom properties dialog will appear.
If you click on up bond and up bond mode is selected this bond will be flipped. The same is true for down bonds.
